It rained for the first time, all day and all night. Peeling steadily through the layers of arid earth, the raindrops activated and supercharged with fresh water, permeated by the intoxicating scent of new rain. It was so pure and fresh, new and familiar that I could not sleep all night, waking up every hour or so to the changing scent, releasing nuanced versions of petrichor into the air, crawling into my bedroom window like trails of smoke from a Japanese incense clock.

The thought that went through my mind: maybe, just maybe, it was worth all the suffering of summer to arrive at that special day and experience this outburst of watery blessing.

Looking forward to a few months break from the heat, dust and constant race against the harsh sun clock... Being able to exercise without my head exploding, walking outdoors any time I wish, and hanging out with this creature, who is the epitome of Hygge (don't you agree?).

Varthemia

כתלה חריפה Chiliadenus iphionoides

Sharp Varthemia (Chiliadenus iphionoides), or in Hebrew Ktela Harifa (כתלה חריפה) likes to grow inside rocks and has the most incredibly resinous, rustic, complex aroma. It truly is like a complete perfume all of its own, exemplifying what Garriague and Chypre are all about.

I've stumbled upon this plant by chance, first near Keshet Cave in Park Adamit near the Lebanese border. A beautiful place with gorgeous view. It was one of two aromatic plants i was unable to identify, but intuitively knew they are both of medicinal and aesthetic value. I later found Varthemia on the mountain above my house. But it wasn't until I saw Yonat HaMidbar post about it and rave about its lovely perfume that I was able to identify the plant (it was never in bloom when I saw it, and it's near impossible to ID plants when they are not in bloom).

Vartehmia Incense Cones

Shortly after I was not only inspired to finally make incense cones out of it, but also studied some of the medicinal properties of it. Among others, it is good for heart problems and diabetes - and seems like a very gentle herb to enjoy in tea (as long as it's not overly done). I picked some for a friend who just had a heart attack, and figured my own heart could benefit from it too. So I've been sipping a lot of vartehmia. marrubium and white mint tea. A lovely combination, and feels to be soothing both the heart and the soul.

Infusions

My next adventure with vartehmia is infusing it in both alcohol and olive oil. From the olive oil I will make a single-note vartehmia soap (I will also have it brewed into tea for the water component of the soap making process, so that it is as naturally fragrant as possible). From the alcohol infusion, which turned out beautifully resinous and rich, I've created a rustic, garrigue-inspired amber perfume, which I am debating if you launch this fall or not. It's a further development of an old, old, old formula that was almost sickeningly sweet because the amber base in it wasn't my own and I am quite certain contained some artificial molecules. Frankly, that base smelled more like an ambreine accord. The perfume I made with it included a touch oregano that balanced this sweetness to some degree, but not enough. I want the new perfume to be more authentic and local, and use my own herbal infusions in it - but without taking away from the luxurious character of the perfume. It is very different from the original, and surprisingly has a bit of the Espionage DNA to it - even there is nothing smoky about it. Must be the ambreine accord (which, FYI, is the core of Shalimar, Emeraude and the like).

Location, location, location...

As of Spring 2017, our courses will take place at Ayala Moriel's new studio in Clil, Israel. This charming little organic village is situated in one of the country's most fascinating regions, the Western Galilee, and is overlooking the Mediterranean sea (gorgeous beaches are only 20min drive), Haifa Bay and Mount Carmel. Clil provides a unique experience for students who choose to stay here* - I'd describe it as a 180 from Vancouver, for better or for worse. Here are a few details so you can get the picture (and photos from different seasons too!).
This off-the-grid village is solar-powered and has small population of under 1000 people, who live in custom-built homes and semi-temporary dwellings (yurts, teepees, modified train cars and shipping containers, etc.) that are scattered among ancient olive groves and wild bush and Mediterranean garrigue (comprising of carobs, oaks, pistachia and thorny bushes). Despite its size, the village is a community bustling with life and culture: our neighbours are the village's cafe (inside a tent) that is opened Thursday-Saturday and hosts live concerts, and there. A large percentage of the population are alternative healers (we're just across the "street" from an integrated holistic clinic offering massage, acupuncture, ayurvedic treatments, and more) as well as creative artists, who have their ateliers in the village - and some would also be happy to show you around - painters, sculptors, potters, glass artists, silversmiths and goldsmiths, basket weavers, etc.

Amenities: 
There is a bakery that is opened twice a week (Sunday and Thursday) and offers Pizza Nights on Tuesdays. On all other days, fresh sourdough breads by other artisanal bakeries can be pre-ordered by phone, or purchased at the local Organic Garden (which tops off their own produce with other fruit and vegetables and organic goodies produced in the village and by nearby artisans). Also less relevant but sometimes handy are the village's book exchange and clothing exchange, which is open 24/7 and is completely free (take what you want and leave what you no longer use - it can come handy if you forgot to bring a hoodie or a book to read). There are three restaurants in the village - Smadar b'Clil, Cafe Clil and Chef Hagit Lidror's Vegan & Vegetarian kitchen (she will be providing most to the catering to our courses, by the way) - which also makes healthy smoothies and mouthwatering raw chocolate treats (she also teaches raw chocolate making workshops!).

Accommodations within the village include one boutique hotel, one guest house (India-style "hostel" on the second level of one of our neighbours) and countless cute cabins for short-term rent - some also offering breakfast as part of the service. Sublets among the village's inhabitants are often listed and could be arranged if booked enough in advance, and also near Cafe Clil there is a small campsite for those who enjoy a fully rustic experience, as well as Meshiv Nefesh - the centre for meditation, which also has plenty of camping space around it for individuals and groups. If you choose to stay outside of the village - we are only 20-30min drive (depending on traffic) from lovely towns that offer also many wonderful attractions to visitors - i.e. Acre and Nahariya. 
In short - there are plenty of places to explore and people to meet in Clil, so I'm sure you will enjoy your visit and find things to do and discover outside of the classroom.

You can enjoy the many hiking trails in the village all on your own (including one in Wadi Yehiam leading to the medieval citadel in Kibbutz Yehiam) - or hire the local tour guide who knows the place from the day he was born (happens to also be my brother!). There are also trail rides on horses. Thursday evenings there is a little market in the village's playground, weather permitting. And watch out for the live music at the cafe - where you can listen to up and coming artists and even already famous ones, in a very intimate setting (and the artists is usually kept as a surprise till the last minute, to prevent over crowding of the venue). The beaches nearby (only 20 minutes drive) also offer year-around conditions for swimming, surfing, SUP, and sea kayaking.
Clil is not only a place where people live differently, but also offers an alternative culture for visitors who seek to take a break from the fast-paced modern lifestyle. It's no ordinary rural place - it is bustling with music, culinary innovations, art, healing and meditations workshops and alternative medicine gatherings, and a place where one can engage and interact with artists and artisans that live here. In short - it seemed like the perfect place to return to and continue my artisan perfumery work - and create a sanctuary for this art.
* You don't have to stay within the village - there are also plenty of interesting places around to stay in, such as Akre and Nahariya - but keep in mind that in that case vehicle is a must as public transit in and out of the village only comes twice a day, very early and very late. 

Bitter Orangecello

The aftermath of homemade cointreau liquor making #bitterorange #yurtlife

I'm making a homemade liqueur out of my prematurely-picked bitter oranges, and while it's aging,  I'm taking a look around at recipes and ideas for which "secret ingredients" to add to the mix. There are many liqueurs that use bitter orange, such as Curacao, Triple-sec, Grand Marnier and Cointreau. Because I'm using unripe oranges, the aroma profile is more vibrant and less sickeningly sweet. I will add sugar in the end, but I want the aroma to be very fresh and invigorating and want to add an element of surprise to this concoction, yet without taking away from the purity of the oranges. Tomorrow is the 7th day of maceration, and then I will add the sugar and let it mature for another week. I think tomorrow I will add a sprig of rosemary to the mix, and then discard it as soon as I add the sugar. Rosemary can be very overpowering. I might also pick a few leaves off the tree and add more of a petitgrain aroma. I'm trying hard to hold back from adding half a vanilla pod, and will save it for when the oranges are very ripe and luscious, to give it more of a velvety feel.

Autumn Aromas & Fall Flavours - The Western Galilee Edition

I'm emerging from what has been one of the most challenging months of my life (and this is pretty much what I've been experiencing with every month since May of last year). Three days ago, we moved into my mom's yurt (a sort of a not-so-temporary dwelling originating in Mongolia) and after one day of total hell (predictable with major change with anyone, but particularly for autistic people) my daughter is adjusting surprisingly well to the new arrangement. So to break the doom and gloom of silence that's been hovering over this blog, I've decided to assemble an illustrated collage of scents that I've been enjoying since arriving here in Israel. It's those little things that keep me going and bring comfort in the midst of total chaos and displacement.

And what better place to begin than the beach? It's the one and only constant in our lives since leaving Vancouver (besides basic activities such as brushing teeth and eating breakfast). The north coast of Israel is fascinating with wild life and the terrain is not as monotonously sandy as the south (although this has its charm as well). Lagoons, rocks and  ancient port cities and fishing villages lace the shores, as well as remains of an ancient factory for red dye from certain sea snails.  Beach culture here is also vibrant and goes year around, with diving and surfing bringing in people who would normally complain that the water is too cold in the winter.

And as if the beach is not wonderful enough just for its warm, azure blue water - there are also some amazing wild plants growing near it. These wild beach lilies are almost as large as the madonna lilies, and just as fragrant. But their aroma is a little different - a sultry mix of salicilates (which are typical for lilies, as well as present in ylang ylang) and hyacinth's heady green. Add to that the fact warmth from the Mediterranean sun, which beats the dewiness out of it completely - and you get a scent of slightly-cooked bulb flowers.


Carissa macrocarpa
Carissa (AKA Natal Plum) is another beach phenomenon, but cultivated. It can be found as a hedge plant in many coastal cities here. This plant originates in South Africa, where its oblong, bright red fruit provides an important source of food (I personally find it too astringent). The flower is what I'm more fond of, as it has shape like frangipani or tiare, and a smell that is gardenia-like, but more subtle.

I've dedicated an entire post to guavas,  so I won't mention them again. But they are not the only remarkable fruit this season. Anona (AKA cherimoya, custard fruit or custard apple) are lovely-tasting fruit that look oddly like pine cones (especially after they get overripe and their peel hardens and completely blackens). The inside flesh has a flaky structure, similar to cooked fish, but melts in the mouth like custard. The aroma is very mild and appealing. This fruit is quite expensive, and always brings me fond memories of when my daughter was born, because my mom brought me many of them as a treat.

Quisqualis indica (AKA Chinese Honeysuckle or Rangoon Creeper) greets you as you enter the veranda at my brother's house. Incidentally, this is a similar scenario to the entrance at his in-laws home. The scent is intoxicating, especially at night. Floral (vaguely jasmine-smabac-like) and heady but not overwhelmingly so, as it is balanced with green notes and overall smells like a good oolong tea, xing qin to be exact (also called King Jade).

Jasmine blossoms are alive and well in this part of the world, and early morning is the best time to enjoy them. By night time most of their scent has evaporated in the sun. Sitting next to one of these bushes, with or without a cup of herbal tea (coming soon) is a most delightful way to start the day and remind me why I came here. I've been enjoying the ones near my brother's home (we've stayer with him for a month), and my own bush, planted 20 years ago, is still alive and well. There are also jasmine sambac bushes growing on my mom's property. What's fantastic is that they have no problem surviving the winters here, and can grow to be impressively large bushes with thick trunks, and they bloom many times throughout the year.

Fragrant herbs, especially lemon scented ones, are one of the things I missed the most about my home village. Nothing compares the taste of freshly brewed tisane from lemon verbena and lemon grass that you've just picked from the garden a few minutes ago. The flavour is so full of life and so refreshing. We like to open and close each day with this brew, sit down with family and relax; and also that's how we greet most visitors. For out of owners this is the epitome of luxury.

In one of my visits to the nearby town of Tarshiha, I spotted a tobacco curing joint on the roof of one of the houses. Tobacco leaves are usually harvested at the end of the summer, and can be left to cure outdoors in this climate, as the first rains won't begin till October (and sometimes even later). The scent of tobacco leaves wafted through the cobblestone lanes and many leaves that fell of the clusters on the roof could be found on the ground.
Syrian maple #fall #autumn
These are leaves of Syrian maple that I spotted in a creek nearby. They don't have any notable scent, but are significant in a symbolic way, because the season is called fall, after all. Likewise, the acorns pictured below are not particularly fragrant, but illustrious of the season's unique sights.

The acorns, I'm told, can be roasted and ground into a flour and used as a source of food. I'm going to try it this year... And serve acorn pudding from teeny tiny acorn cups.

The flowers of Vitex agnus-castus AKA Abraham's Bush, Abraham's Balm or Yarnakh, appear in clusters like lilac, only that they are pointing upwards. They have a distinctive perfume that I can't describe. The best way to experience it outside the wild habitat is uncork a vial of my Indigo perfume.

The first mandarins are ripe from the inside but still green on the outside. Nostalgic scent for me, as we'd pack them for the first days of school and they marked not only the beginning of the new school year, but also the many citrus fruit that will continue to ripen and provide us with vitamin C throughout the abrupt and rather stormy Israeli winter.

The olive harvest season is now, and the rain wouldn't arrive to wash the dust off the olives. It was a very weak year for this crop, and many families including mine decided to not even bother picking them. My mom insisted and we helped her pluck enough olives to fill two sacks, which surprisingly yielded an entire can of oil (probably around 2 gallons). The experience was a tactile torture as there is nothing I hate more than chalky dust all over my fingers, toes and clothes. The first rain finally arrived in a short but violent outburst first thing in the morning of November 1st, so maybe now I will be more inclined to pick the remaining olives. I much prefer the smell of petrichor and olive foliage to that of dust accompanied by scorching sun.
