On Cats & Cassis

Cassis Bush (Black Currants)

The cassis and cat-urine analogy is nothing new. But I have always found it puzzling. Perhaps because I can't say I ever smelled a cat pee. And judging by how their other secretions smell, no matter how deep in the sand they try to bury them - I don't really want to know. 

To me, blackcurrants (Ribes nigrum) have always been this peculiar, juicy yet funky berries, with sophisticated profile of very pungent odour that comes through the nose when eaten (or drank), a full-bodied aroma hiding behind it, yet contrasted again by a sharpness in the palate from their intense tangy taste - sour, if I'm allowed to use that word without offending anyone (I heard that vintners get particularly insulted if you use this to describe tart/tangy wines!). 

Turns out there is an explanation to this unsavoury association: blackcurrants contains several sulphuric compounds called thiols. Namely, we're looking at p-mentha-8-thiol-3-one, 4-methoxy-2-methyl-2-butanethiol and last but not least: 4-thio-4-methylpentan-2-one, which is identical to the compound found in fragrant feline urine. In fact, it is also called Cat Ketone! 

Although sulphur is one of the CHNOPS - the six elements that make up all compounds of organic chemistry (along with carbon, hydrogen, oxygen and nitrogen), sulphur-containing compounds are not very common in perfumery ingredients. You are definitely familiar with sulphur compounds from the culinary worlds - sulphur is found in many edible foodstuffs, from staples such as eggs, garlic and onions to less obvious grapefruit and asafoetida (the latter is used as a substitute for garlic and onions among Buddhist monks that are forbidden from eating these lustful substances). 


In Europe, and especially Eastern Europe and Britain, cassis is a very popular flavour (and crop). In the USA - not so much (and there is a technical  explanation for that which has to do with a ban due to white pine blister rust as well in the article sited before). Generally speaking, blackcurrant bushes are susceptible to too many diseases and pests, and this is a problem that is constantly being a challenge to agricultural plants breeders. Another possible explanation for its popularity in Britain in particular is that in WWII, cassis syrup from local was distributed free of charge as a source for vitamin C, to counteract disease and malnutrition whilst the island was isolated and deprived from its citrus supplies from the continent. 

I've experienced it in teas, cordials, fruit juices (Ribena being a famous brand of those) and sodas, fruit wine (amazing!), liqueur (Créme de Cassis, Cassis Vodka and more) and cocktails (Kir Royale, anyone?), candy, and even as a flavour for pastilles of Bach's Rescue Remedy. Then there is the famous savoury condiment: Dijon grainy mustard with cassis (try them in a brie & pear sandwich!) I particularly enjoy blackcurrants as a flavouring for black tea, and also it works in teas and tisanes blended with elderflowers (which has some surprising berry qualities that echo those of cassis). It is also wonderful in desserts (of course!). One that left a life-long impression on me are Violet & Cassis macaron by Pierre Herme. I also love adding some Créme de Cassis liquor to upside-down cherry-chocolate cake, as well as to a blueberry-sour-cream tart. If I happen to have the berries I would also mix them along with the blueberries for interest (and also to mellow out the intensity of the blackcurrants). The fresh or frozen berries can be added to strudels, pies, tarts, crumble and coffeecakes. Jams, jellies and syrups are enjoyed in or on yoghurts, cheesecakes, puddings, custards such as the specialty Danish and North German desert Rødgrød. Lastly, their aromatic, slightly bitter and astringent, intensely tart qualities make blackcurrant a suitable companion to savoury dishes such as meat stews and roasts (lamb in particular), seafood and fish, and even in barbecue sauces. The leaves are used in Russia as a tisane, and to flavour pickles.
I must try them fresh in a salad with tomatoes and mint - this actually sounds divine. I am actually feeling inspired to try them in a (cooked) beet salad with onion, spearmint and balsamic vinegar. 
Cassis (Black Currants)
In perfumery, we don't use the berries, but rather the unopened buds, which are solvent-extracted to create to create blackcurrant buds absolute. This sticky, highly viscous liquid has a very dark green colour and is difficult to work with not just because of its challenging consistent, but because of the aroma profile: Intense, warm, pungent, fruity, berry-like scent. This note is often perceived as unpleasant, almost urinal when undiluted. It is only in high dilution that its delicious fruity cassis aroma comes out in its most appealing manner.

With all these challenges, it is invaluable in perfumery, because it is one of the few natural essences with a fruity aroma. Also it is unusual in that it is an animal top note! We use it in perfumes of the Floral Fruity and Chypre Fruity families as well oriental and gourmand compositions where a sparkling berry note is required. A little goes a long way with this intense absolute. Dilution to 50% in alcohol is recommended before using, especially if you're just beginning to work with this. This will help you both with the dosage and also to smell it more imaginatively. Even than, you will need only very little to add the unique cassis effect to your perfume. 

Cassis aboslute is a very, very, very light top note. So whomever does not like it can rest assured this phase in the perfume they're experiencing is sure to dissipate within minutes. For the bold accessory note that it is, you might find it surprising how widely it is used, and also how versatile it is. Because it has both fruity, animals and green aspects - it really can contribute something special to composition of almost any genre - Floral, Chypre, Green, Oriental...   

Blackcurrant buds absolute pairs particularly well with sulphur-containing grapefruit oil, rhubarb compounds, pineapple, strawberry and other fruit extracts, davana, cacao, ylang ylang, marigold (tagetes), vanilla, rose, galbanum, tomato leaf, boronia, violet leaf and most fruity citrus notes such as clementine, mandarin, blood orange, etc. It also works with animalic notes  such as civet, oud and beeswax absolute, giving them a lift to the top. 

Famous perfumes containing cassis: the wonderful Chamade (Guerlain), with its contrasting galbanum, vanilla, oakmoss and hyacinth. Van Clef & Arpel's First (designed by Jean Claude Elena) - I must stress that although it was marketed as such, it was absolutely not the first to use this raw material. Also Aqua Allegoria Pampelune, notorious for its sulphurous qualities; l'Ombre Dans l'Eau (Diptyque) which is intensely green and rosy; AnaïsAnaïs (Cacharel), Black Orchid (Tom Ford), as well as troves of other "Fruitchoulis", Baby Doll (YSL), Ode a l'Amour (Yves Rocher), and Naomi Campbell's aptly named Cat Deluxe at Night. 
Among my perfumes, Tamya, Treazon, Coralle and H21 contain notable amounts of this ingredient. 

Rad Dads: Honouring Fathers Fragrantly on June 19th

The school year is coming to a close, and today I'll be witnessing (and experiencing) a huge milestone: My daughter is graduating high school. Her school years have been an immense journey, and reaching its end is bittersweet. When I think about it, my chest is going to burst from pride when I recall how she was in kindergarten, and how far she’s come. And my heart overflows with gratitude and happiness when I remember all the wonderful people who provided their guidance and helping hands along the way - teachers, therapists, childcare providers and friends - who all became our second "adopted" family here in Canada. It really does take a village...

And then there is always the pinch of regret and sadness, not only about saying goodbye to all these wonderful people; but also remembering all the ones that could not come to celebrate with us, some simply because they live too far away; but others, who one would think should have been there, and don’t even know it’s happening, simply because they chose to disappear from my daughter’s life altogether. Among those somebodies are, unfortunately, her own father, who has been missing out on a lot of important milestones prior to this one, and also with his choice to abandon his daughter made me by default the dad in the family (funnily enough, when asked about my gender, my daughter tends to label me as "man")…

Yet, although my personal experience with fathers is less than stellar, I haven't lost hope. Three of my brothers are wonderful dads and watching them raise their children is a delight (I only wish I could do so more often, and not from so far away!). My daughter was fortunate to have a reliable stepdad who was a supportive and positive influence for the best part of her childhood - and also have been an important contributor to the success of my business: he has designed, maintained and faithfully hosted my websites and sent all my newsletters out till recently. Which brings me to the point that we've launched a new website, wand it is already active on a temporary domain (the switchover is scheduled to take place any moment - and when that happens, the old domain will look the same as this). Lastly, this year I I've met some rad dads, ones that would go to the other end of the earth to keep their children safe and happy; ones that would always put their children's best interest first, and would sacrifice and give them endlessly, just as much as most mothers would in a similar situation. My heart goes out to men like this, especially the rare breed that raises their kids alone like I do, and are also the mom in their family... For these dads I dedicate the following perfumes:

Behind the Scents with Tamya Parfum



The first rain in a desert country is something extraordinary. There is a word for it in our language, “Yoreh”. After the dead-dry months of dust and dried straw and broiling sun, the earth responds to the rain gratefully by releasing a haunting aroma and setting free the many seeds that are buried within her. They will sprout as early as the next day, and within a couple of days, the earth is covered with teeny signs of life of many species. The most significant plants, besides the bright green grass against the rich brown soil, are the Autumn Crocuses, aka Sitvanit ha-Yoreh (Sitvanit is from Stav, the Hebrew word for Autumn, and the Yoreh is the first rain). In other words – the Autumn Crocus of the First Rain.

The other species is a type of bluebell, which is called “Rain Bells”. A very modest sibling to the European species, as these flowers are tiny and quite rare. They don’t grow in groups as the European ones do, so one must remember where they emerged in previous years to find them.

After nine months of the best pregnancy I could ever wish for myself (or any other woman), and after 22 hours of labour (which I would happily fast-forward if it was only possible), on October 29th, 1996, at 12:50am, my 9 months and 22 hours odyssey to motherhood had reached its destination, and a beautiful girl took her first breath, which most likely had smelled of a combination of wheat germ oil in a hospital... That very night, the Yoreh had knocked on the roofs of the Western Galilee, and clenched the thirst of the dry earth. Two days later, when we came back home from the hospital, the earth was covered with the spouting grass. My mother and brothers came to visit. The clouds had already cleared (that’s what they do around the Mediterranean), and in the late afternoon and the magic hour just before sunset, the warm Autumnal sun has glowed on our euphoric faces and the little fruit-of-the-womb. We went for a leisurely stroll among the olive orchards and observed the same golden light glowing through the rare petals of Autumn Crocuses and Rain Bluebells with a peaceful feeling of wonderment in our hearts.




I am telling this as I am biting into the last creamy guava that has been scenting my house for the past couple of days. The scent of a guava fruit instantly reminds me of these first weeks ten years ago. The baby and me were fortunate to enjoy the nourishing abundance of Autumn fruit. My mom spoiled me with only the best of them: guavas, anonas (aka custard fruit), persimmons, pomegranates and the very first tangerines of the season – perhaps not quite ripe enough, but no one cares. The first tangerines are a symbol of autumn and the first days of school. They are still rather green on the outside but already ripe enough to enjoy, especially if you are a kid.

In summer 2004, I felt it was time for me to bottle that special magical hour and that magical autumn. I wanted a perfume that would be glowing like the diagonal sunrays just before sunset; I wanted it to be abundantly fruity; I wanted it to be as sweet as a baby’s breath, and tender as the scent of a newborn crown.

I overcame the challenge of the composition by using a few unusual essences to compensate for the limited fruity palette of the Natural Perfumery Organ (guava note was out of the question, unfortunately): The precious oil of Yuzu, an exotic Japanese citron with an intensely fruity, citrusy, bright aroma (reminiscent of grapefruit and Clementine combined, but much better) as the main fruity note along with black currant buds absolute. For the heart, I chose mostly white florals, that all have a hint of fruit and are sparkling and lively: Jasmine Sambac, Hyacinth Absolute, Ylang Ylang and Frangipani. The base is milky and musky, with notes of ambrette, Atlas Cedarwood, Sandalwood and a tad of vanilla. The results were an instant success with the first trial. I had to later on eliminate the hyacinth, as it is a very unusual building block and very difficult to find. However, omitting it did not make a significant difference on the perfume. It still smelled like “Tamya”.

The challenge was with picking the name. I was chasing my tail trying to find nice French or Italian names for “Golden Dusk”, “Fruit of the Womb”, etc. Sometimes, the simplest things just stand in front of us and we stare through them blindly… After a while it dawned on me that I should simply use the name of the muse for this perfume: Tamya. And so it remains to this day.

Miracles Happen


This is Tamya two years ago in early Fall 2004. Her femur is broken and she is sitting in a wheel chair posing for a newsletter of The Corporation. Her entire left leg is in stabilzed by a brace. This was the most traumatic event in her life. The pain and the helplessness has forced her to use language in situation in which otherwise she would have been self-sufficient. She learned to trust us, her parents, in every detail of her life and had to communicate more complex needs. She learned that she can lean on us to support her cope with pain. In a sense, this was Tamya's re-birth. It was as painful as birth and she emerged out of this extreme experience a completely different person. At the age of 8, the unbelieveable happened: Tamya started talking.

At that time (Fall 2004) I was wearing Yohji more than ever, as I just discovered that scent. From than on, Yohji reminds me of this transformation from pain to sweet victory of overcoming one’s own obstacles… Yohji will forever remain a scent that is difficult for me to wear, as it brings the ambivalent feelings of this family trauma and the significant inner change it triggered in the three of us. Ironically enough for me, Yohji also starts green and with ozone notes that are peculiar and somewhat aggressive. Both notes are extremely difficult for me anyways (perhaps the only two that I have a very strong adverse reaction to)… There is also an intense bergamot note, like an intense sniffage of an ultra-fresh Earl Grey teabag. The ozone gives up on its domineering aspirations after about half an hour, and by the time you reach the basenotes, the greens grassy notes dry down (literally…) into the sweetest coumarin accord ever – just like fresh cut grass that is left to dry in the warm sun. Upon drydown Yohji turns around 180 degrees and reveals the most luxurious confection of vailla, caramel and juicy raspberry syrup, all dusted with a powdery comforting softness. I always wanted to write a review of Yohji, but the opportunity occurred only now. I feel that only within this context my impression and experience of Yohji is the most truthful (though extremely subjective).
