The palette of natural perfumers is expanding, and natural isolates are one way to add new notes, nuances and special effects to your perfumes as well as challenge your composition skills. In the theoretical part of this course you will learn about the different types of isolates, how they are manufactured, a little bit about their chemistry, and how to know if your raw material is truly natural or not, learn to identify isolates by blind-testing, find out where they are naturally occurring and be able to pick them out in a composition or a naturally-occurring olfactory scenario; and and last but not least: learn about the qualities that make isolates useful and valuable when composing fragrances. In the practical lab sessions, you will incorporate these exciting raw materials into compositions of your own, and receive hands-on guidance from master perfumer Ayala Moriel addressing issues unique to your style, blending and process, and problem-solving along the way.
Designed for the most advanced students of perfumery, and for working perfumers who wish to polish their skills at manipulating the composition with much finesse and refinement, and master the use of unique, rare and unusual accessory notes. This week-long intensive course runs Sun-Thu from 9:30am-4:30pm, and offers theoretical and practical guidance alongside hands-on lab exercises and experiments.

Long time ago, before the internet was invented, scent used to play an important role in people's remote communication. I am not only talking about the scented stationary I loved to collect when I was in elementary school (Juvenile strawberry candy scent for Strawberry Shortcake's character; and a more sophisticated, powdery-roses type for the sad clown Pierrot). I was equally smitten my entire life by the smell of a package or a letter from loved one that came in the mail, the smell carried unintentionally a little bit of the person who wrote it, the smell of their home in a faraway land...
In feudal Japan, it went as far as being a crucial part of matchmaking: A woman would pick her mate judging her suitor’s personality not only by his words, but also by the scent of the letter that carried them. This was before there were any photos, not to mention internet - and these two factors alone could either mean marriage or - never meeting the man at all.
Letters would be scented either with sachets, or more commonly - by waving the letter in front of the burning incense before sending it off. But these are just some of the techniques used of resenting paper and stationary.
In this workshop, we'll discover our scented paper associations, imagine a particular smell to be the "signature" for whatever comes off our desk; and learn how to scent it - there is an easy way that's suitable even for young school-aged children; and a more sophisticated method that needs to begin with the milling of the paper itself. Depending on your group, we will teach the appropriate workshop.

The second book by Ayala Moriel is a book which is in the works since 2005, and was planned to be published at the end of year 2020. While many hurdles were thrown at us during that year, the project is still in progress, and will be published as soon as this important work is finished, and in the best possible way - to create a book that is relevant, unique and accurate. The author is grateful for those who continue to believe in the project and that have and will support its completion. This book is created for you.
This comprehensive dictionary of raw materials of natural perfumery is meant to serve as a continuation of Ayala Moriel's first book, "Foundation of Natural Perfumery" (2014). Perfumers and students alike will benefit from condensed resource covering over 200 different plant species (and some mineral and animal materials) - and the raw materials for perfumery and incense which are derived from them - which amount to close to 400 different botanical extracts and preparations, presenting different colours and shades for the natural perfumer's palette. Each plant will receive a unique treatment showcasing its organoleptic properties, in Ayala's unique language which is both poetic and informative; as well as quick reference for how it can be used in perfume compositions. Some plants which are particularly important for the trade will receive wider coverage entailing their cultural and historical significance as well as healing or therapeutic properties whenever applicable. In some cases, comparison between different varietals or terroirs will be also addressed.
Ayala Moriel is a master perfumer and a leader in contemporary natural perfumery. In 2001 she began composing inspired botanical perfumes for her eponymous brand, which have become world-renowned for their artistry, storytelling and integrity. A passionate advocate for sensory education, she shares her knowledge and expertise through her Foundation of Natural Perfumery professional program, private classes, workshops, and her poetic SmellyBlog. She divides her time between the West Coast and the Western Galilee.
