Chypre Week 2011

The past few week were consumed entirely by big projects such as the week long Chypre course (September 19-23) at the studio (and a few other events and projects about which I will tell you in my next posts). I like to start my week with a nature walk, so that students have a direct connection to plants, their aroma, and the many inspirations that come from the rich and beautiful natural world and how they impact all the senses - visual, tactile, olfactory and even the sounds of nature are a strong part of my creative process and I like to pass that passion on to them. Besides, it's always been the students' favourite part of my classes - going out to nature and seeking inspiration, using the techniques they learned int he lab to find, assess, evaluate and analyze scents in real life.

We walked down Robson street towards Stanley Park, where we stumbled upon a rockrose bush, and noticed the smell of it, reminiscent of the cistus oil and labdanum absolutes we encountered in the class (it's probably a different species though, and not as fragrant as the ones growing in the Mediterranean region...).

When we arrived at the Rose Garden in Stanley Park, we were surprised by the beautiful pairing of purplse shiso and heliotrope flowers next to each other. Both are visually appealing with their purples and deep red, and have amazing smells: purple shiso smells practically like a perfume all of its own - very fragrant, floral more than herbaceous, and with a very fruity-aldehydic top notes. Heliotrope smells like piperonal (heliotropin) - which most of us associate with either marzipan or playdoh!

Then, with our noses up in the air, we proceeded to the South Creek trail in Stanley Park (which connects the Rose Garden to Beaver Lake, amidst the rain forest) - in search for the naturally-occuring sweet Chypre smell of forest undergrowth in fall... Its' a challenge to find that scent in the air, and even more so to pin point its source, but it is there, awaiting those who listen with their noses. It was an exercise in focus, refreshing our olfactory bulb, being open to new and unfamiliar smells in a rather moist and cold environment (aka: not ideal for discerning smells too readily). At some point, we had to close our eyes and go through the path to find that sweet smell of fallen fir needles, red cedar, moss, lichen and rainforest floor...

Our first session in the lab was dedicated to trying to make Oyselets d e Chypre. I searched in vein for an authentic formula or recipe, so I thought I'll use the opportunity to teach my students how to try to make their own experiments based on the recipe I had for incense cones, but using a different gum to bind them (Gum Arabic, rather than the very costly Makko powder - as we had no intention of using these for incense burning, but rather as sculpted potpourri).
We all ended up with sticky hands, fragrant with sage, cassia and labdanum... And with results that were even stickier and had to be left alone to dry for at least a week. Once the water evaporated, these ended up smelling very Chypre-like, in a most authentic meaning of the word - smelling of labdanum and Mediterranean herbs. Warm and lovely.

In the next lab session was dedicated to creating a chypre accord solid perfume. And in the last two days we created chypres in alcohol base, first from a given formula, and than manipulating it into different sub categories from the Chypre families inspired by the forest walk (i.e.: a coniferous chypre or green chypre) or by classic perfumes that the students analyzed in class (i.e.: a fruity chypre inspired by Femme, woody chypre like Mitsouko, etc. ).

Throughout the week, students were given lectures about the history of Chypres, learned about the many subcategories of the Chypre fragrance families with examples both from classic perfumes as well as all-natural perfumes from Ayala Moriel's line to demonstrate how this family can be represented using only natural fragrances. And every morning began with blind-scent-ID-games and studying the raw materials (olfaction and characteristics of each note and a bit of history of the plant as well as the main chemical constituents).

The next intensive week in Ayala Moriel's Foundation of Natural Perfumery course will take place in January 16-20, 2012, and will focus on the Fougere fragrance family. We have limited number of spaces for new students, who will be required to send in a CV with a coverletter to get accepted to the program, as well as enroll in the Perfumery Lab 101 a 2 day lab prep course prior to that week - scheduled for January 11 & 12th (9:00am-3:30pm) and January 13th (9:00am-1:00pm). Intensive Weekend

The past two weeks have been uber-busy for me, at times even sleepless. The time this blog post is published will serve as an evidence. There were many things in the making - including two new retail spots in Vancouver (Belmondo Skin Care Studio is one, and the other will be announced at a later date), various special events (i.e.: Mi Casa’s Christmas Party & Open House) and last but not least 3 full days dedicated to my perfumery students who came over from all parts of North America just to learn natural perfume at my studio!

This is the first time I’m holding a mixed-level group, something I decided to try in order to allow my correspondence students a more realistic and convenient opportunity to travel for a more in-depth instruction over the course of 3 days instead of just one. The challenge for me was to not bore the more advanced students with redundant information (at least by presenting it differently and using new examples of raw materials and perfumes), and at the same time make sure those who are starting at step 1 receive a thorough introduction that I always give new students.

As much as theory is important, there is no doubt in me that the practical parts of the weekend are the most valuable and probably were the most memorable for my students (even if at times I’m quite sure that my exercises could seem a bit odd to some). Some things you just can’t learn from a book. Making perfumes is one of them. This is the reason why they have packed their bags and traveled so far just for three days. A picture is worth a thousand words and sometimes only seeing is believing. For others, encouragement and coaxing to think out of the box and to dare experimenting without worrying about how terrible the results may smell is what it’s al about.

What I wanted to achieve in this course more than anything else is to create a stimulating and nurturing learning environment that provides hands-on guidance and experiential learning. It is important for me to teach each student what they need to learn, based on their level, interests and professional goals. While many useful techniques and efficient work habits are taught, there is always room for new ways of thinking. And even though I am officially the teacher, there is always something new I learn from my students. We all perceive scent a little differently and sharing those concepts and impressions in the classes is invaluable. My students also teach my by forcing me to reflect on how I communicate both olfactory and abstract or interpersonal ideas.

The next term begins February 1st and there is room for up to 6 correspondence students in the first level. This will include an option for participation in the intensive weekend too, which will run either in May or June (more details TBA). To register you can pay online (the correspondence course fees include the essences kit for level 1) but you must first contact me with your CV and a cover letter explaining your reasons for applying to the course and your goals. There is an Early Bird price until November 30th offering 10% off the full tuition.

There are no pre-requisites for attending these workshops, but we do recommend you register for the class as early as possible, as the number of spots is very limited (we only take 6 students for the practical workshops, and up to 10 for "theoretical" workshops such as lectures and olfactory presentations).

Crème Parfum workshop

Learn how to design and create your own personal perfume from precious botanical essences. By the end of the workshop, you will have made a perfume to take with you. We will provide simple jars as basic packaging, but fancy silver compacts or porcelain pillboxes from the perfumer’s collection will be available for purchasing, for those who wish to add an extra visual and tactile touch to their first olfactory creation!

THE ART OF PERFUMED CANDLEMAKING

Join our guest instructor Nikki Sheritt, an artisan candle maker of Seattle-based Gabriel's Aunt, for an afternoon of candle-making. You will learn how to make beautifully fragrant soy candles using essential oils and natural vegetable waxes. You'll be guided step-by-step in the process of blending the essences, moulding and crafting a high-quality, clean-burning candle. By the end of the class, you will take with you a specially scented candle, beautifully packaged and gift wrapped - ready to go under the tree!

This class is an interactive introduction to the art of natural perfumery. You will learn about how perfume is constructed, and will get exposed to the thinking process of a perfumer. You will learn how to sniff like a “Nose” and evaluate beautiful and strange essences from around the world, and smell how they were incorporated in some of Ayala Moriel’s perfume creations.

DIY Booze

Learn how to make your own fine liquors from readily available aromatics and spirits.

Aromatic Cooking with Fresh Herbs, Spices & Floral Essences

Join Ayala for a fabulous evening of aromatic cooking- using fresh herbs, freshly ground spices, floral waters and essential oils - in both savory and sweet dishes. Your will be given a collection of recipes to try at home, and receive guidelines for aromatic cooking. As an inspiration, we will be preparing a seasonal feast together (which we will enjoy at the end of the class, of course!) including an appetizer, a main course, a dessert and beverages to accompany the meal. I hope that by the end of the class you will feel inspired to use your own aromatic culinary creations at home and feel encouraged to express your creativity in the kitchen, using the best quality aromatics you can source.

In each cooking workshop, no matter the season, will give some basic guidelines and recipes for:

Preparing from scratch your own ground spice mixtures and pastes (such as curries, garam masalas, etc.).

Using fresh herbs in savory dishes, dips, condiments and pickles.

Preparing your own salad dressings and marinades using essential oils and/or fresh herbs.

Using exotic spices and/or essential oils in desserts and baked goods.

Concocting specialty teas and beverages - chilled or warm, depending on the seasons.
